After careful measuring, I somehow managed to put together a soffit that slopes the outside edge of the soffit to the wall. It's level from end to end but is one-half inch higher at the wall on one end and about one-fourth higher at the other end. I haven't taped it yet or put any mud on it so I'm wondering if there were any simpler solutions than taking it all apart.

I forgot to say that this whole section is just under 5 1/2 feet long.
Would building it up with mud to even it out be too crazy?

Building it out with mud is probably the last thing you want to do. You should be able to remove the drywall, assuming it was screwed on, and shim the framing in the appropriate places with some fillers which will level things out the way you want.
