I would like to reface my fireplaces by removing some of the brick on one and the stone on another but need some help on how to do this. I would like to remove the stone and brick and replace with drywall so the two rooms the fireplaces connect are not broken up by the fireplaces. Is there anything I need to do to remove the brick or stone that is special or can I just use a chisel?

Your best choice (and possibly the only one) may be to false wall to flush the surface. If it is a real fireplace, you can not knock off sections willy-nilly without possibly destroying the structural integrity of the stack.
