I am planning to install an electric radiant mat in a basement bathroom that I'm putting in my basement. I thought I'd try to keep my life simple and just buy one from one of the big box stores. Lowes sells SunTouch and HD sells Honeywell. Any opinions out there one either one?

I would say the biggest (and most important) difference between SunTouch and Honeywell is the wire construction.

SunTouch uses a dual-wire construction that serves a couple purposes.
The first is to reduce the EMF levels that you get from any electric system to zero.
The second is to provide a single point connection to the thermostat. That way you can begin laying out your mat and end it wherever is most convenient.

With Honeywell there is only a single wire, which will give off some EMF. You will also need to find a way to bring the end back to the thermostat.

SunTouch is grounded end to end, including the cold power lead, with an actual ground sheath instead of just a wire, which could be missed if the wire is damaged.
It's also completely manufactured in the USA, with the factory in Springfield MO.

Lastly, SunTouch has a 25 year warranty on their mats, which is also transferable (I believe the only one in the industry).
