I'm installing a laminate floor in my familyroom which has a stone fireplace I have to cut in to. Do I really need to leave 1/4 in. the fireplace and the end of the flooring or can I cut in tight?

There should be 1/4" all the way around the room for expansion. It will expand. They make trim pieces so the gap will not be noticeable.
Also, I will have another moderator move this thread to the Laminate Flooring forum.

you can also undercut the stone & slide the planks underneath. that's what the pros do.
