On my Craftsman riding lawnmower I have been getting a grass strip down the middle of my cut. Would excessive grass chippings under the deck cause this problem? If this is a factor, how would it cause the strip of grass?

Well it wouldn't hurt to clean the mower deck, but it's my experience that a strip in the middle is a result of a pulley/spindle problem. Reach under the deck and grab a blade. See if it rocks back and forth (repeat with other blade) If it rocks even a little, you may have to change the bearings.
You should sharpen your blades too.

Uneven tire pressure may also cause a strip in the middle.

Other possibilities could be worn blades in need of replacement (ends of the blades worn off), or blades on upside down.
