My bathroom sink gets some awful black gunk in the drain area. Is that backup sludge...like a tree root stuck in a pipe? Cause nothing but water and regular use for the sink.

Any thoughts?

It is most likely remnants of deteriorated hair, just hanging around until it turns black (too bad we can't do that on our heads when it turns gray). It would probably help occasionally to pour hot (really hot) water down the drain to help it at bay, along with an eco friendly drain cleaner.

As indicated, pouring boiling water down drain may be helpful. There are enzyme digester drain cleaners available in the plumbing aisles of home centers.
