I'm redoing my bathroom and want to completely enclose the shower in tile (including up above). Since cementboard, thinset and tiles are heavy, I'm thinking I need additional joist support to battle gravity. How closely would you recommend the joist be aligned to support the weight?

The cbu doesn't weigh any more (maybe a little) than sheetrock. It is the solidness of the cbu that you are looking for, so do it. Use the Rock-on screws that are called for. They have aggressive threads and wider heads and will hold well.
