If anyone used to be a plumber, can a hairline crack develop in a toilet tank in a very short period of time or does it have to take a long time to develop?

That depends on how tight the nuts and bolts connecting the tank to the bowl were made.
We're only talkingg about a ceramic porcelain. A crack can develop at anytime during use. Cause are overtightened nuts, people leaning back too hard on tank, overtightened fill valves(ballcocks) etc.
So no..it isn't out of the ordinary for a toilet to develop a crack.

But I have one other follow-up question, would this hold true of the crack was in the corner of the tank and not anywhere near a bolt?

Sure. it is porcelain. it is very fragile. Bumping in to it could cause a crack.
