I have a deck that has been enclosed to make a screen porch. My problem is that the deck boards have gaps between them, some as much as 1/4" wide. I want to seal them to keep out bugs and dirt. I considered laying another level of pressure treated wood staggered over the gaps. Or an indoor-outdoor carpet. But I would rather use some type of material to seal the gaps with. Is there any caulk or sealant that I can apply to the gaps that will seal them and not be affected by wet and temperature changes?

You don't want to put ANYTHING between the deck boards to seal the gaps. The boards need that gap so that they can expand and contract.

Cover them with an indoor/outdoor carpet, or go below the joists and put some sort of a solid layer there. Something like a Dri-B-Low or UnderDeck system between the joists, or simply attach corragated fiberglass panels to the bottom of the joists.
