Should I use greenboard or regular drywall for the walls in my kitchen?
May be doing a tile backsplash.

Welcome to the diy forums!
I'd go with regular drywall. It paints better and once painted it will be protected from moisture fine. Ideally you would use cement board for the tile work but there shouldn't be any issues with the backsplash being tiled over reg drywall.
