Walls and Ceilings - Do I have to remove popcorn ceiling?

We have removed a sunshine ceiling in our kitchen and have drywalled where the ceiling was, now we must match the popcorn ceiling that is in the rest of the kitchen. Must I remove the old popcorn ceiling first or can a ceiling guy redo the whole ceiling so it all looks the same, perhaps a knock down finish? The original ceiling was redone about 15 years ago and I painted over it with oil based paint.

The drywall man should be able to blend new popcorn to match the old. He can not apply a knock down texture over the popcorn. The old popcorn would need to be removed to apply any texture other than the same type of popcorn.
