Is it possible to just lay brick and cement them together without a slab to sit on or would the bricks sink and break apart over time?

The porch needs the same quality foundation as the main part of the house.

If it is actually a pation, you could use interlocking concrete pavers. They are set on a compacted soil base and a 1" sand setting bed.
