I would like to know if a gas water heater and a wood stove can be connected to the same chimney?

Do not run the two in the same flue (unless you have a death wish), but you can have two separate flues in the same chimney.
Also, if the two are in separate flues, but in the same chimney, it is good (but not necessarily required by code) to have a height difference between the two at the top of the chimney. - It stops the flue gas from being sucked down the chimney.
Your chimney will also draw better and can be closed when not in use because it is separate.
