Just curious. I know in general, use wated on water and oil on oil, but can you use a water based polyacrylic on an oil based stain?

Absolutly. Just give the oil extra time to flash off the solvent. I would give it a couple of days unless the label indicates either a shorter or longer window. The danger is topcoating to soon, as the waterborne coatings set up very quickly and can "trap" the escaping solvent. This causes cloudiness, or worse, peeling.

The oil stain MUST be GOOD and DRY!! You can't rush sealing over the stain like you can with oil base poly/varnish.
