The shifting of the panels in the wood doors in our house has resulted in cracked caulking, etc. Any suggestions on how best to remove the old caulk prior to re-caulking?

Door panels are not supposed to be caulked! They are meant to 'float' in the door frame work with the changes in humidity.
You can carefully cut out the old caulk with an utility knife. Usually if you cut the sides and then get a hold of the caulk it will pull off. You will have to scrape and sand any ridges left behind.

I've had 6 panel doors where the movement of the panel was 1/4 inch. Don't caulk them.
