I'm planning to cover my cabinet sides with plain side panels. I don't like the door look.
Question 1: how thick should the panels be? 1/8" or 3/16"? Or just stick on veneer?
Question 2: what is the preferred method to attach them?

You can use either thickness just as well. Just be sure you address the edge that will be showing, with a molding. Attaching it would probably be best made using contact cement, as it is instantaneous and permanent, even if you make a mistake. Since the cabinets are in place, you really should not have any problem lining up the sheets, just be careful.
