We have a new island in our kitchen made from two base cabinets. It is 4' long and 2' deep. Our granite countertop will overhang 1 foot on two sides making a L-shaped dining counter. Our cabinets came with 4 corbels but we're not exactly sure where would be the best places to position these corbels. Any suggestions would be appreciated.

Granite will be heavy, so you will need good support, and the corbels will give that to you. Being such a short cabinet, you can probably position each about 4" in from the ends. This will give good support and will keep you from hitting your knees when sitting at it. Of course if you can afford the space and install a third one dead center, you will feel warm and fuzzy about the install.
