A quality metal polish like MetalGlo, Flitz, or other will remove oxidation, rust, tarnish and sticky residues while leaving a protective coating. It is important to wipe knife blade after use to dry and remove residues. Periodically polish for protection. This time of the year when it is cold outside and you have your knife in your pocket and you return to heated environment, condensation forms on blade. While protective coating helps to prevent rust, remembering to wipe blade on pant leg or handkerchief to dry is a good idea.
