I accidentally ripped the wires off a new headphone :( I peeled off the insulation hoping to solder them and noticed the wires were wound with nylon-like material which may not allow a good solder. Any suggestions on how to reconnect them?

The nylon is just an insulator. You should just be able to pull this back to expose the either stranded copper wire, or aluminum.
