We are having granite counter tops put in and an undermount Elkay sink. I know that adhesives are used to hold the sink and am I correct in assuming that the sink will acually sit between the plywood and granite. My concern is will it hold full basins of water and the disposal. Are there braces that need to be installed. Am I just being paranoid?

A certified undermount sink installer will know what he is doing. If you are working with a reputable company, their labor should be guaranteed. The sink should be able to accommodate the weight of the water.
