was looking through the owners manual of my unit rheem electric furnace bhk,
there are dip switches and the one is for on demand dehumidication (when used with humidistat) what does this mean and can i use this function to add more comfort in cooling? i already have a humidistat which is for my aprilaire humidifer? just wondering

What you have is the set up that you put a Humidistat on . This will slow the blower down when on AC to take out more humidity.

currently i have my humidifer hooked up to the G and common, to use this other function what do i have to do? will i have to switch the wires when cooling season starts

I don't know how Rheem wires it up, You will have to look at the drawing on how it's done.

Yes, you may have to switch some wires around.

Check out the paper work you have with the unit. Or on the blower door
What you have now turns the humidifer on when you need more humidity.
When you go to AC the humidistat has to slow the blower down to take out more humidity. So check out what you have there. On a Trane V/S the humidistat goes on R an BK in the blower unit
