Does country of origin matter for soapstone? What should I look for? I found some from Italy that was honed.

Soapstone is mined around the world. There are essentially two grades--artistic, which is soft and is used for carvings, and architectural, which is dense and hard and virtually impervious to staining.
One thing to consider is if a quality guarantee is offered. A reputable vendor and/or fabricator will guarantee no faults, fissures, or talc veins. They should be able to guarantee that it is impervious and not affected by acids or alkalies. Grain should be consistent and homogenous without stratification, splits, or spalls. If you are having the countertop installed, is there a warranty on labor.
