Walls and Ceilings - Transition Durock to sheetrock and sheetrock texturing?

I'm getting ready for my master bath remodel and was looking for a little help. I'm going to use the Schluter products for the shower, but the thought of doing a shower with sheetrock behind it gives me the willies. So I'm going to go ahead and use Durock behind the shower. My first question is what to use at the transition point between the durock and sheetrock. Would I just use drywall mud and tape?

Secondly, I will be putting in a pocket door at the entry and obviously have to cut back the sheetrock to frame it in. The walls have the plaster skim-coat which has been brush textured in a circular pattern. I tried to replicate the texture on one other project and failed miserably, and so was wondering if there were any good DIY how-to's on matching up the plaster brush texturing.
