I have an open dining romm, living rooom and kitchen. I need help with the paint and decorating. Do I need to stick with the same colors in every room.

yes, but you can use them in different amounts in each space.

FOR EXAMPLE, you could use burgundy, olive green & gold like this: in the kitchen, you could have a wallpaper with a mostly burgundy background, with gold grapes & olive leaves, and gold counters, and use olive throw rugs, valances & accents. then in the dining room & living room, you could paint the walls in the gold. in the dining room, use an olive rug under the table, draperies that have all 3 colors & placemats that match the grape pattern in the kitchen wallpaper. in the living room, use an olive sofa, curtains & throw pillows that are burgundy with an olive & gold floral pattern, and an area rug under the coffee table with all 3 colors.

so, yes, you're using all the same colors, but for the most part the kitchen seems burgundy, and the other 2 rooms are mostly gold with olive & burgundy accents.

with an open floor plan, all the spaces that you can see from one vantage point should coordinate (not be exactly the same, but coordinate). you shouldn't, for example, have a blue & yellow country kitchen, with an elegant & formal olive & gold dining room, with a contemporary peach & mint green living room. although each room in & of itself might be very attractive, the home won't seem put together or have a nice flow.

as far as where & how to change wall colors: you can't stop mid-wall. you have to wait for an inside or outside corner. or you can use a chair rail and change the wall color beneath it where it runs into a doorway.

If you have an "open dining room, living room and kitchen," you technically only have one room, so keeping the same color would be a good idea. As Annette said, there are options, though my choices would be more conservative than hers.
