Bunch of questions.

1. How do I complete the joint between the drywall and hardibacker where my shower wall ends and the bathroom wall begins?

2. Any opinions about the paperless drywall? HD is pushing it as a mold resistant product but it is new.

3. How do I adjust for the difference in the 5/8" drywall and the 5/8" hardibacker? (I have only read about this on this forum, but forgot the answer.)

i am justa diy kind of guy, i would suggest that you add a framing member(wall stud-doubled if possible,or 2x4 liad flat)
to screw both pieces to. special screws are available for the hardi, but do not work w/dry wall(they cut through the paper)

1) alkali resistant mesh tape, thinset ans set your tile over the seam. Voila...nothing to finish
2) Sorry, can't help you there. Haven't seen it in my area.
3) I furr ou the walls when the surfaces are not plane, but I suppose you could use some drywall shims behind the last stud of the cbu. The cbu will certainly bend out 1/16-3/32" over the stud bays no problem, the last 1/32 to 1/16" can be made up when you set the tile over it.
