Can someone explain the difference between single and double pole thermostats for me?

It would be the only control for an electric baseboard heater.

The baseboard heat is 220 V so you have two hot lines going to it now the double pole thermostats will open and kill both legs to the heater. The single pole will just kill one leg and the baseboard will have a 110V in it but the heat wont be on. They put single pole contactors in a lot of AC unit now to just save cost. It just opens and closes one leg of the 220V.

So which is the best one to use? I now understand how they work, but don't know why I should choose one over the other.

Id say the double pole cost more but when off no power in the unit.
