My bathroom sinks both have the 3 hole installation, one hole for each lever/handle and then the faucet hole.
I want to put in new 1 hole faucets with the single lever control. I know I will have to buy the little things that plug the lever/handle holes.
Can this be done?

I depends on the spread of the holes. If they are standard width, the single handle faucet will probably come with a cover that will occlude them. If not, then, yes, you can buy stainless plugs for the holes.
