I have an older house with a wall mounted faucet that needs to be replaced. I would like to know if anyone has ever done this? I am wanting to switch out with new countertops and new conventional sink and faucet instead of having a wall mount. I would like to replace it before I deploy but don't want to rush and do a shotty job. Any hints or helpful ideas other than have a plumber come and poke me in the eyes for some outrageous amount would gladly be welcomed. Thanks!

You will need to open the wall and find out what kind of piping is in there, and whether the pipes come from above or below. With proper access inside the wall ( read: rip the wall open!) this is doable. How easy depends on the layout and what type of existing pipes you have.
Keep in mind that a modern sink with deck-mounted faucet is a 22" sink which needs a 24" cabinet. On older homes with wall mounted faucets, the cabinets are sometimes smaller than that.
