I got a sweet deal on some 3" snap & click type laminate flooring that has a 3mm pad aready attached. I'm going to install it in my basment. I know I have to put down a moisture barrier, but I bought an underlayment from Lowe's that has a pad & moisture barrier in one. Is having double padding (underlayment padding & the pre-installed 3mm pad) going to reduce that laminate sound or just make my flooring spongy?

the attached pad itself reduces the laminate sound. you will be over-padding with an additional pad, which as you suspect, will make the floor too spongy and that vertical movement will result in gaps in your seams & the tongues cracking.
even though you got a "deal", follow the manufacturer's instructions & specifications, or you'll void your warranty (if you have one).
