I have a simple ranch home and I'd like to open up one garden-facing wall and install patio doors. Needless to say it gets cold here in upstate NY and I'd rather put in some money up front than buy some inadequately insulated doors and pay over and over again in heating bills. I know this is pretty general, but can anyone offer suggestions?

I'd highly recommend Pella's line of products. Perhaps you have a Pella Window & Door store in your area. You can have window treatments installed between the panes (fabric blinds or colored) that help insulate or reflect, depending upon what you get. That, coupled with high performance glass will give you good results. Almost everyone who has the blinds raves about them. But their products aren't cheap!

I second XSleeper's recommendation on Pella, and from a contractor's/installer's viewpoint, it don't get no better than this. The new construction doors have nailing fins, and they furnish goopy tape to seal them up with. They suck up to your opening and operate with a feather touch. I have installed both sliders, french, half french, singles, and have had no surprises. The customers seem to be happy, too.
I will be installing some Jeld Wen in a few weeks (customer purchase), so I may or may not be adding them to the good list. They seem to be well made.
