I am installing unfinished red oak in my kitchen. How well do the water based products work, such as Minwax Water Based Polyurethane for Floors?
Odor is the main concern, since we will be living in the rest of the house during the work.

Water-based polyurethane floor finish is often preferred over oil-based because it is quicker to dry between coats, lower in odor, and non-yellowing. Oil-based polyurethane is touted to be more durable than water-based.

I agree, oil base poly is more durable. Also oil base will change the color of the wood - deepening the different colors. water base will not so keep that in mine for the finished look you want.
