I have to refinish the varnish on my boat because its starting to fade. I've never done this before and was wondering if anybody could help me out by telling me how to do this?

Welcome to the forums

I have only revarnished on 1 boat and that was over 25 yr ago.
First make sure you use a good grade of marine or spar varnish/poly. Any discolored finish needs to be sanded down. Depending on what you have there may be areas that need a light staining. You will probably want to apply 2-3 coats of spar varnish/poly.

It really depends on what shape the wood/varnish is in. Always use the finest grit that will do the job.

If it is in real good shape 180-220 grit would be fine but you will likely want a rougher grit for the bad areas, 120 grit maybe even 80 grit if it is real bad. Always sand with the direction of the grain to avoid unsightly scratches. The finish sanding should be done with 180-220 grit.
