I have a fixture for flourescent tube lighting directly above my kitchen sink in an older (1929) house and cannot stand the light that it produces, not to mention the fixture is an eyesore. I would like to know if there is a way that this fixture can be easily (relatively) converted to house track lighting. Any insight would be appreciated.

Will track lighting's profile be ok for your location? If you don't have the vertical space, you could always opt for the "hockey puck" lights with a lower profile. But basically the answer to your question is "yes". You will have to remove the light, and install the track using the original wiring.
