I have a bathroom floor which I want to replace. The house is over 100 years old, and the bathroom floor is not level. (Yes, the house has settled and there is extra support such as lolly columns. The bathroom floor was still not level after all was said and done.) Can the floor be leveled with new subflooring or do we have to use a leveling compound?

You could level the floor by removing all of the old plywood to expose the floor joists then sister new ones on that are level. Just replacing the subflooring wont level out anything as the boards will "follow the floor", in this case the old joists which have a pitch to them.
A Self Leveling Cement would level out the floor but would mean bringing the lowest point up to level with the highest point in the room. If the low point is in the doorway you could create quite a step up into the room. SLC is not cheap so if a lot of bags are needed you wont be saving a whole lot over sistering the joists.
