I have the room framed and wired. What do I do from here. Should I call a professional to put up the wallboard and plaster it or can I do some of the work myself to save some $money$.

It shouldn't be a problem to hang sheetrock. It comes in 4'x8' [easier to hang] and 4'x12' [easier to finish] Hang the ceiling first, then the walls. It is best to hang the boards crossway on the rafters and studs - horizontal. Always stagger the joints. Finishing isn't all that difficult either allthough both hanging and finishing are hard work.
If you plan to hang and then hire out the finishing it would be best to contact a finisher first. Rock hung right costs less to finish than poorly [improperly] hung rock and the price will vary. If it is hung the way the finisher prefers the price will be less and the quality better.
BTW - you did get your inspections and insulation if/where needed done first?
