What's the difference between the two? Do both come in the same size/cut/"finish"? If I was covering a cement patio are both equal for the job (apart from maybe color)?

Flag is flatter than fieldstone. Flagstone usually has more labor involved in it's preparation, but is easier to lay flat and level.
