When I went on vacation 2 weeks ago, they were just coming up.

I come home to find it's already about 2 ft wide and 1.5 feet tall.

I had wanted to separate, but would it look awful now that it's so thick?

I would go ahead and split them now. They should fill in over time.

We've found that anytime from early spring through late summer is ok to seperate and move them. They're pretty hardy....

Hostas can be divided anytime. They are very durable.
