Which is better for connecting the water lines to a water heater? It seems like flexible connectors would be easier to install and reinstall (when replacing a water heater the next time), but I don't want ease of replacement to replace quality of job.

I always preferred to "hard-pipe" a water heater until the concept of strapping a water heater to strong framing members in the wall became standard.
Hard piping will have a tendency to "hold" a heater in position but if you have earthquake strapping then a little flexibility between the heater and the house piping is not a bad idea.
