I am installing a PVC vinyl folding door to cover a furnace and hot water heater. Is there a way to make the door heat resistant?

pbohning, Welcome to the DIY Forums.
You should not need to have a heat resistant door. The door should be louvered to allow combustion air into the room for the furnace and water heater to be able to properly burn. If you stut off the air supply, your furnace and water heater will not work properly. Good luck.

Could I cut slots in the door to allow heat to pass through?

You can purchase louvered panels that install in the door. You cut the hole to size and install them.

I think "pbohning" is installing and accordion type door. I don't think that vinyl is approved to use as a door to a furnace room!!! If it's OK to use, then I would leave an inch or two space at the bottom and the top already has space so that should be enough to let air in.
