I have an entrance in to a large room from adjoining room and need to hang a french double opening door. There is not enough header room for a pre-hung door. Can anyone give me any tips or point me to some pics etc.

Cut a little out of the bottom of the header so that a PH french door unit will fit. Installing a PH unit properly is usually at least a half day project. To do it as individual doors is going to require some vacation time!!

I'd suggest you get a prehung since the width would work fine. You'll just have to cut a little off the bottom of the prehung jambs and off the bottom of the doors to make them work if you want to fit it into your current opening.

If you need wide trim, they make many varieties of 3 1/4" casing. Standard casing profiles or fluted ones with corner blocks. (rosettes)

instead of cutting the header up you can cut a little off the bottom of the doors. trying to get 2 doors to work together from a slab is a difficult project. I wouldn't recommend it.
