I currently have an (ugly) top mounted sink in a Corian countertop. I would like to replace it with a stainless undermount sink. Is this possible? I am concerned with the Corian edge that will be exposed around the sink opening as I cannot see what it looks like. Can the Corian edge be "finished" or "polished" so an undermount can be used? Thanks.

Yes, this can be done, but the opening will most likely need to be resized to fit the SSUM sink. You will probably need to have a Corian Fabricator do it because most plumbers won't mess with Corian, which is just as well. It's easiest if the SSUM sink opening is a little larger than the drop-in opening so the cutout can be enlarged. A template will be with the new sink showing actual opening size, so it's easy to compare. The fabricator will need it to make a hard template to guide a router to cut out the opening. He will then sand out the opening and ease the top
& bottom of the opening before mounting the sink.
