I am currently getting granite counters installed. I will be tiling the wallsbehind the granite. Should the gap between the countertop and the tile be the same as all the other gaps, or should this tile sit closer? Do I just grout this gap as I would all others or do I need caulk or anything else here?

I like to hold that gap to 1/8" or less. Caulk it, grout won't last.:)
