Hi ...
I'm trying to be a diyer ... but its a slow process. I purchased a new toilet paper holder ... as the old recessed one is a disgrace. I removed the old holder which has now left a gaping hole. Behind the hole is insulation and 2 x 4s. I am not planning on positioning the new holder at the same location. So my goal is to make the wall appear uniform.
Where do I start?

There are patches made that can go right over the hole and you just have to put some joint compound on top and blend it into the rest of the wall.

I would cut a piece of drywall [1/2" thickness or whatever you have on wall] and nail/screw it in place. Then using joint compound and drywall tape cover the gaps. You apply a thin coat of compound to the wall using it for glue to hold the tape - smooth with a broad knife, when dry apply more mud, sand, apply another coat if needed, prime and paint.
