We're remodeling our kitchen, and the finished floor to finished ceiling height is going to be 8' 1 3/8". We're putting in kitchen cabinets that include an 8' pantry cabinet, so the top of the cabinets will be exactly 8'. That will leave 1 3/8" between the top of the cabinets and the ceiling.

Will this look weird? Should we get some moulding to put in that space, or leave it? Should we get a shorter pantry to leave some space above the cabinets?

I suggest crown moulding. Visit one of your local home centers and take a look at the moulding options on their kitchen cabinet displays.

Do you mean have the crown moulding fill the 1 3/8" space between top of cabinets and ceiling? Is crown moulding designed to be used to join to a ceiling? (I've seen it used to cap off kitchen cabinets).

Use the crown molding on top of the cabinets, just as if they were walls, attaching the crown to the cabinet and to the ceiling. Matching the crown to your present cabinet finish may prove to be a bear, but you could always paint it to contrast, and then install it. Make sure you look at all the selection and make sure what you buy won't be too tall and interfere with the doors.

If your cabinets have a face frame,(the doors DO NOT cover the surface of the fronts of the cabinets), you can install a narrow crown or scribe molding.

If your cabinets are euro style, no face frame, then you will need to add a nailer to the top of the cabinets, before installing any molding.

If the pantry is standalone, then you could raise it and the uppers to the ceiling.
Again, if the cabinets are euro style, this, and an out of level ceiling, may interfere with the doors opening fully.

Thanks - the pantry is at the end, and there's a fridge between it and the first floor cabinet, so raising it is a very good option. I checked and there's a small nailing surface for scribe molding on the cabinets. They are full overlay, but they also have a face frame.
