would a dehumidifier down here in the hot humid south of louisiana help the a/c out and make it feel more comfortable in the house?

it can., but in a way, it will add more heat to the home.
Is your current A/C newer or older?
A system that is sized right for the home would do a good job alone.

not the best unit but its a new Goodman 14 SEER 5 Ton for a single story 2426 sqft house.

Did the dealer do a load calc on the home? Old house, single pane windows?
5 tons seems a bit much... ???
I'd say maybe 3 up to 3.5 tons.

In a hot humidly climate a dehumidifier is a must for no or low load times! A dehumidifier is one way to solve this! If you have a basement or crawl-space a dehumidifier is a must!
