I want to put a shower in our existing bathtub. I want add a shower head ect. and then tile the 3 walls and maybe the ceiling(above the bathtub only). Can I tile right over the plaster walls(not drywall)?

Plaster is no better than sheetrock in wet areas. Additionally, plaster over time tends to crack and separate from the lathe causing movement that the tile can't handle. You can't always see this separation looking at the walls but often its there.
