I will be remodelling a house built in 1923 which has interior plaster walls with a light stucco. Am I better off trying to skim coat the walls until they are smooth or cover with sheetrock. If covering should I use 1/4" or 3/8? Thanks

If the walls are in good shape - meaning they don't give if you push on them - I'd skim coat. Add drywall and you have to recut baseboard trim and add extensions to your outlet boxes.
