Newbie attempting to build up a three piece victorian window and door casing. I have puchased Poplar 5/4" stool stock. Should I stick with poplar stock for the rest of the trim or can I use the less expensive MDF? If it matters, I will likely be routing an Ogee detail into 4S4 stock.

It probably won't matter. Recall that MDF is more subject to damage than poplar, so there may be some chipping around the door from being struck that wouldn't be so likely with wood. Consider fastening the MDF as, before you start. Fasteners can cause MDF to swell and split unless they are of small gauge or have pilot holes drilled for them.
