1) do you tape one first? Which?
2) When the two meet do you just butt them up or overlap somehow?

I usually tape the horizontal first since I'm on stilts, but it doesn't really make a difference.

I overlap them.

I also overlap them in the corner.

One thing to keep in mind when you are coating the corner is that you will not be able to coat all three surfaces with mud at the same time.

After you put on the tape, and squeeze out the excess, pick one wall, and using a 5" knife, coat the tape from the ceiling to a point about 5 " down the wall. Next, turn the knife sideways and coat from the vertical angle along the other wall to about 5" out (away from the corner). This will cover two of the three surfaces.

If it is easier for you to wait for the tape to dry, you can do it then, or immediately after it is applied is o.k. too. However, for the tape on the rest of the walls, it is usually better to wait until the tape dries before coating it.

The next day (or when it is dry, which may take 2 days if there is a lot of humidity in the air), use the 5" knife to coat the ceiling with a light coat, and the entire angle is then finished.
