i just saw that the space between the beams an baseboards are only wide enough for wood paneling and not sheetrock how can i make the sheetrock fit?

You will have to remove the baseboard, install the sheetrock and then reinstall the baseboard. With paneling being thinner than sheetrock, what they did was correct but you need more space now. Since you are adding thicker material, you will probably have to trim the ends of the baseboard to get a proper fit. Good luck.

"FYI" They sell box extenders at HD, Lowes, and the like.
